Goa'uld don't know they're facing the Tau'ri (or Earth humans) and UNSC don't know what the hell they're dealing with at all (but are very surprised to see other "humans"). The UNSC ship decided to play it safe and jumped to FTL before taking much damage, however both sides now have knowledge of the enemy. Knowing Goa'uld, they didn't really need a reason - a spaceship loitering around their space is reason enough. bumped into a Ha'tak belonging to some Goa'uld or other. After which, following a rebuild period, the UNSC decided to go back out to space and start exploring. So, history developed as it did in Haloverse until the end of the Covenant War.
